30 Days Of Challenge - Day Nine- May 9th





Warm sunny days and cold evenings. What a good combination. A reason for distraction in the craft room don’t you think? A wake up call for inspiration? It seems all I want to do lately is spend hours in my craft room creating a storm and I ask myself is there anything wrong with that? Like I mentioned before, this month is about doing things that I love doing right?

So why do I feel guilty? Now my reason isn’t because I haven’t been making the time, because I have, but my reason is not sharing the balance with my other goals. I am at odds with it. It is slowly starting to make me question myself. And then I see another project I want to start or something to prepare for and then I’m scanning blogs, watching youtube vids and hopping on down to the craft store to pick me up some products. Not to mention now ordering more online since my paypal account has been link to my bank card [ was that a mistake :p]

I don’t think I am failing exactly. If anything I am being productive and loving every moment of it, but I do remember that I have books that need to be read in time for the blog tours I committed to and the Fan-Fiction challenge I need to be writing every day for so that I know come July if I need to go onwards to 20k. Besides it’s not like I am not enjoying the books I am reading or renewing my love for supernatural. I am just on a scrapbooking high.

Regardless of whether I am focused on one passion or not, I am achieving what I intended. To spend time and money on things that I love and that make me happy and I sure am feeling happy being inspired.

I won’t have subheadings today because for majority of today I was sleeping of this cold and when I woke up I tried to read and got distracted with Anna’s craft Cupboard – so many pretties- http://www.annascraftcupboard.com.au/store/

But I will share with you some photos of the products I am planning on using soon and a recipe for tonight’s dinner. Which was going to be something else, but I mistook chicken for mince [never reply on memory alone- always refer back to the recipe] so tonight I am going to try and make: Chilli mushroom and bean mince

Ingredients (serves 4)

  • 1 quantity Savoury mince (see related recipe)
  • 1 tablespoon olive oil
  • 200g button mushrooms, thinly sliced
  • 400g can borlotti beans, drained, rinsed
  • 1/2 teaspoon dried chilli flakes
  • 1 teaspoon fresh thyme leaves
  • thick toasted bread, to serve

Method

  1. Place savoury mince in a large saucepan over low heat. Cook, stirring occasionally, for 15 minutes or until heated through.
  2. Meanwhile, heat oil in large frying pan over medium heat. Add mushrooms. Cook, stirring, for 5 minutes or until light golden and tender. Add beans and chilli. Cook, stirring, for 5 minutes or until beans are heated through.
  3. Stir mushroom mixture into savoury mince. Cook for 1 to 2 minutes or until heated through. Spoon over toasted bread. Sprinkle with thyme. Serve.
